&吃圆的，还是吃扁的？&张天一推了推鼻梁上的黑框眼镜，一边舀粉下锅，一边用带着&米粉味&的常德腔，和老乡打招呼。在寸土寸金的北京环球金融中心一个40平方米的门面里，24岁的湖南常德伢子、北京大学法学院即将毕业的硕士研究生张天一开了一家常德津市牛肉粉店。 4月4日，张天一的&伏牛堂&常德津市牛肉粉店低调开业，和他一起创业的三个小伙伴更是有硕士、MBA，还有前公务员。职业前景光鲜的北大高材生，为何会选择开米粉店？昨日，记者采访了张天一。
&硕士粉&开在京城繁华处
守着一锅牛肉、牛骨汤熬到凌晨两三点，次日一早再搭地铁首班车进店，烧水、煮米粉、招呼客人&&还有3个月就要毕业离校，这就是张天一现在每天的生活。
在北京朝阳区环球金融中心M楼，旁边就是高大上的渣打大厦，周围不乏法式大餐、日本料理等高端环球食肆，你很难想象，这里会有一家湖南街头常见的&津市牛肉粉&。张天一的店就开在这里，40平方米，月租金近万元。记者在他发来的照片中看到，这家开在高档写字楼里的粉店和街头店很不一样，店堂敞亮，墙漆沙发色彩鲜明，更像一家西式快餐厅。更不一样的是它的海报招牌：&硕士粉，良心粉&，&我们是90后，在环球金融中心，为自己上班。用知识分子的良知，在他乡，还原家乡的味道&。
曾回常德遍尝百店拜师学艺
为何选择开米粉店，张天一认为，一是自己有乡土优势，二是借鉴了互联网思维。眼下，非常火爆的雕爷牛腩、黄太吉等餐饮品牌，正是用互联网思维运作而风生水起。这给了张天一很大的启发，但在实地吃过雕爷牛腩100元一碗的牛腩饭和黄太吉十几元钱的煎饼果子后，他却发现，前两者运用所谓的互联网思维，只是通过加强营销提高了顾客的期待，却并没有在实质上改善顾客体验，顾客还需要为营销成本付高额账单。
曾在读本科时就创业开过两家餐馆的张天一，最终决定选择家乡人人爱吃的牛肉粉。从今年2月开始筹备，他回到常德，走街串巷地吃遍了常德的百余家米粉店，最后他选了一家口味最正宗的米粉店拜师学艺，确定配方。2月中旬回到北京，他几乎走遍了北京城，最终决定把粉店开在在环球金融中心。此时，已经搭上了自己所有的积蓄。
【对话张天一】
希望社会不再把&北大学生卖猪肉&当噱头
长沙晚报记者(以下简称&记&)：本硕一起读了6年法律，工作却完全无涉法学，你觉得浪费时间么？
张天一(以下简称&张&)：在我看来，除了具体的条文，法律背后更重要的是它的精神和思维。用一种思维去做事情，就不那么限制行业了。
记：你想通过北大研究生卖米粉这事，说明一个什么问题？
张：如果有一天，我们不再把&北大学生卖猪肉&、&清华学生当保安&之类当作炒作的噱头，而是尊重每一个职业岗位时，这个社会才算是正常的。我的偶像是寿司厨师小野二郎。他活到九十多岁，一辈子只做一件事，把小小寿司做成一门艺术。
记：除了你的身份，粉店还有何与众不同？
张：这家店里不设服务员，我们有三个垃圾桶，顾客用完餐，自己收碗，将垃圾按照残汤、塑料碗、筷子纸屑的顺序分类好。作为履行环保责任的奖励，我们则回馈一份水果。我们要把米粉做成艺术，做成受人尊敬的行业。今天我想吃牛肉，用英语翻译。_百度知道
