要：本文针对食品加工过程中的主要复杂化学反应产物存在的一些潜在对人体有害化学物质所产生的食品质量
安全问题进行探讨，系统和深入地了解这些复杂化学反应体系在食品加工条件下有害化学物质形成的规律及采用现
代检测技术跟踪相关有害化学物质的生成途径，从而科学地阐述有害化学物质形成的分子机制，并在此基础上，要
进一步探讨抑制这些有害化学物质生成及它们在模拟胃肠消化环境中的消化性能变化，研究有效且安全控制这些有
害化学物质的新技术，以减少和控制这些有害化学物质的危害。

Abstract ：In this paper, food quality and safety problems caused by potentially hazardous chemical substances formed during
complicated chemical reactions in food processing are discussed. In order to scientifically elucidate the molecular mechanism of
the formation of hazardous chemical substances, it is necessary to systematically and deeply understand their formation
regularity during complicated chemical reactions under food processing conditions by tracing their formation pathways using
modern testing technologies. Furthermore, the formation of hazardous chemical substances and their changes during simulated
human digestion need further exploration. Also, new technologies for effectivel
